This wine is fermented in stainless steel with pigeage and prolonged extraction and is unfiltered. It matures for 12 months in French oak, between new and used barrels, which gives it:

Nose:Ripe black fruit, malt, cloves, smoke and subtle spices.
Mouth:Rich and velvety structure, well-integrated tannins and a persistent finish.

About the Producer

Quinta dos Sentidos, nestled in the hills of Silves, is a project that exudes authenticity. Created by Beat and Charlotte, two passionate individuals who traded certainty for the adventure of winemaking in the Algarve, the property has become a space where nature, creativity, and dedication meet.

Here, the five senses are awakened at every step: the red of the Silves sandstone that dominates the landscape, the aroma of wild thyme, the sound of crickets at dusk, the texture of the vines in the limestone soil and, of course, the taste of the wines that are born there.

The philosophy is clear: respect nature and intervene as little as possible, so that each vineyard can express itself authentically. The farm integrates 1.5 acres of untouched wilderness, with half a million bees, an organic lake, and more than 300 plant species, including 110 fruit trees of diverse origins. Everything is designed to create a vibrant and balanced ecosystem.

The wines reflect this vision — boutique productions, full of freshness and character, that carry with them the Algarve soul. Tato is the intense and genuine expression of the Algarve. With a very limited production ( 5297 bottles ) and artisanal winemaking, this red wine from Quinta dos Sentidos is pure character and ready to impress.

We find an exuberant black fruit , with notes of clove and a touch of smoke . On the palate, we are enveloped by a velvety, yet persistent texture . The aromatic complexity ensures a long and memorable finish.

Its depth and structured body make it the ideal pairing for robust winter dishes. It calls for rich flavors such as traditional Ossobuco , a succulent grilled Entrecote , or a well-seasoned Roast Partridge .
